The CFIA is also an overview of food trends, with the best innovation in ingredients and PAI. For 2023, the edition also targets the theme of the Local, a strong trend, which has increased in recent years. This interest for consumers is justified by a need to get back to basics, to reassure themselves about the origin and composition of food, a feeling strengthened since the pandemic. There is also a desire to contribute to the survival of its territory, by favouring the choice of products that are good for the environment and health.
